For us, Wiggle isn’t just a restaurant. It’s a reflection of who we are and what we care about. Fresh local ingredients, supporting our community and creating joy in the simple moments.

How We Started

WE STARTED SMALL

Just a pop up tent, a wood-fired oven, and a lot of hope.

Week by week, pop-up by pop-up, we met more of you. We learned what mattered: simple food, made well, with ingredients that taste like home. When the chance came to open a permanent spot on Main Street, we knew it was time to settle in and keep the oven burning.

WHY PIZZA?

For Evan, pizza is more than food—it’s a passion. He’s been in the kitchen for over 20 years, working every role from line cook to head chef to butcher. While living in Oregon, he trained under James Beard–nominated chefs who introduced him to the craft of wood fired pizza.

That experience, combined with a love for simple, honest ingredients, is what shapes every pie we make at Wiggle today.

The menu is short and seasonal on purpose.

Every choice is guided by the farms around us and the community we love. That’s why we call ourselves a small batch restaurant—we care about limiting food waste, supporting local growers, and staying connected to the rhythm of the seasons.

A pizza takes only a few minutes in the oven, but to us, it carries the work of local farms, the spirit of Hudson Valley farm to table traditions, and the joy of sharing something warm across the table.
